There are so many food sites and blogs out there and I love to check in and see what others are cooking and discussing. I used to peruse them to be horrified and amused by unappetizing recipes and food photos, but most blogs have gotten really good, especially the photography. I kind of miss the old days (i.e., three years ago) because at least then they were earnest. Now some are so slick and awash with product placement "McGiffey's Barbecue Buddy Spice™ Easy Fast Mexican Potatoes" that the charm is gone. Ah, progress.
I gather ideas from the sites I do admire but rarely make an exact recipe. Here's an exception. The Wimpy Vegetarian is a blog about cooking mostly plant-based food that's approachable and varied. I like her friendly, personal tone and unfussy approach to cooking. This mac and cheese has more cauliflower than pasta, tomatoes for a bit of acid, a creamy cheese sauce punched up with curry powder and a crunchy bread crumb topping. I used half goat cheese, half co-jack and it was divine. She added kale to hers and I would've if I had any on hand. Check it out here — her photos are much better than mine!
